Shrimp Casquinha (Gratinated in Shells)

Ingredients
- 300 g cooked 77foods shrimp fillet, thawed and chopped
- 1 small onion, chopped
- 2 chopped garlic cloves
- 2 peeled and seeded tomatoes, chopped
- 1/2 cup coconut milk
- 3 tablespoons curd cheese
- 1 tablespoon breadcrumbs
- 2 tablespoons grated Parmesan cheese
- Chopped coriander
- Olive oil, salt and pepper

Sauté the onion and garlic in olive oil. Add the tomatoes and cook until they break down.

Add the chopped prawns and sauté for 2 minutes. Add coconut milk and curd cheese, stirring until it forms a cream.

Finish with coriander. Adjust salt and pepper.

Divide into serving dishes (or ramekins). Sprinkle breadcrumbs and Parmesan on top.

Bake at 200°C for 10 minutes, until golden brown. Serve immediately.
