Peruvian Tilapia Ceviche

Tilapia cubes "cooked" in lemon juice, with red onion, pepper and coriander. Fresh, citrusy and quick.

Ingredients

  • 300 g of 77foods tilapia ceviche, thawed (or 400 g of diced fresh fillet)
  • Juice of 6 tahiti lemons
  • 1 red onion plume (thinly sliced)
  • 1 seeded chili pepper, chopped
  • 1 bunch of chopped coriander
  • 1 teaspoon grated ginger
  • Boiled corn and diced sweet potato (leche de tigre accompaniment)
  • Salt to taste

Instructions

    In a cold bowl, mix the tilapia cubes with the lemon juice, salt, ginger and pepper. Leave to marinate for 8 minutes (the acid "cooks" the fish).

    Drain off 2/3 of the liquid, keeping the fish moist.

    Add the red onion and half the coriander. Mix gently.

    Serve on deep plates with boiled corn and sweet potato around. Finish with the remaining coriander.
