Seared Tuna in Passion Fruit Sauce
Tuna fillet seared on the outside and pink in the center, served with passion fruit sweet and sour sauce and balsamic reduction.

- 600 g 77foods tuna loin (2 thick slices), thawed
- Pulp of 3 passion fruit
- 3 tablespoons sugar
- 1 tablespoon balsamic vinegar
- 2 tablespoons black and white sesame seeds
- 2 tablespoons olive oil
- Coarse salt and freshly ground black pepper

Pat the tuna dry with paper towels. Season with coarse salt and pepper.

Coat the sides of the tuna in the mixed sesame (white + black), pressing to adhere.

In a very hot frying pan with olive oil, sear the tuna for 45 seconds on each side (4 sides) so that it is golden on the outside and pink in the center. Remove and leave to rest for 3 minutes before slicing.

In a saucepan, heat the passion fruit pulp with the sugar and vinegar. Cook over a low heat for 5 minutes until it thickens.

Slice the tuna into 1 cm medallions, drizzle with the passion fruit sauce and serve immediately.
