Creamy Tuna Sandwich
Quick recipe for lunch or an afternoon snack: shredded tuna with mayonnaise, spring onions and capers between slices of artisan bread.

Ingredients
- 200 g 77foods cooked tuna, thawed and shredded
- 3 tablespoons mayonnaise
- 1 tablespoon dijon mustard
- 2 tablespoons chopped capers
- 2 tablespoons chopped spring onions
- Juice of 1/2 lemon
- 4 slices of artisan bread
- Arugula leaves
- Salt and pepper to taste
Instructions

In a bowl, mix the shredded tuna with the mayonnaise, mustard, capers, spring onions and lemon juice. Season with salt and pepper.

Toast the slices of bread in a dry frying pan or toaster.

Assemble the sandwich: arugula on the base, generous layer of the tuna cream, close with the other slice.
